Easy Weekly Meals

Happy Monday lovelies! As a working busy mom, I run a tight schedule. Everything from running the kids to school and sports to keeping the house together and working to pay the bills while also working to enjoy life and take vacations with my family. That’s why I like to have a couple of easy meals on hand to make throughout the week!


There are a couple of products I like to always have on hand which can easily make a couple of different meals! Having plenty of veggies, a few different meat options, rice, beans, and cheese are always a must!


To start with, tacos are an easy go-to for a busy day running around. I like to use ground beef with some taco seasoning, but chicken or even just veggies with taco seasoning is also a tasty way to go! After you’ve chosen your meat option, just saute some onions and bell peppers, pull out your favorite toppings and you are ready to go!


Another easy weekly meal, and one that the kids love, is oven-baked french bread pizzas! This is perfect because you only need a few ingredients, and everyone can choose how they like it best! For the base ingredients, all you need is french bread, margarita or pizza sauce, and grated mozzarella cheese. As far as toppings go, I like to add some veggies like mushrooms and onions, pepperoni is always a favorite, and adding some different types of cheese is a delicious way to go!


Breakfast Burritos is another must-have easy meal after a long day. Eggs are a great source of protein and adding bacon is always a favorite. I also like to add cheese, tomatoes, bell peppers, spinach, and mushrooms while scrambling my eggs. If you are looking to make the burritos a little more filling, add some rice or black beans to the base. Don’t forget to choose a couple of toppings that you fancy. A few go-to toppings for us include salsa or Tapatio, sour cream, avocado, and cilantro.


Things can be a bit hectic at times, so having a list of quick meals that the whole family will love can be very helpful!
