Spring is coming up fast, which brings fresh looks and fresh foods! One of my favorite meals for moving into the warmer seasons is a salad! There are so many variations so I never get bored! Today I wanted to share a few of my favorite salads for moving into Spring!
Having items for an easy salad throughout the week is always a must! Starting with a bag of mixed greens, I like to cut mine so that the leaves are not too big. A few of my favorite toppings that I always have on hand are cherry tomatoes, cucumber, red onion, and a little parmesan cheese. Finishing it off with my favorite dressing, I usually go with a vinegarette or an Italian dressing. This salad is great because I usually have all of these items in the house, and if not they are easy to substitute out!
If you are wanting to spice things up, try a grilled shrimp with jalapeño lime vinaigrette! This one is great for bringing the heat during the warm seasons! The key here is to marinate the shrimp in a chile spice blend so they can soak up all the flavors! I grill my jalapeños before adding them to my dressing which includes lime juice, some red wine vinegar, a little honey, and garlic. I also like to add grilled pineapple as a topping, this will help to bring out the sweetness of the dressing and pairs beautifully with the heat from the jalapeño! A couple of other ingredients you can add include arugula, cherry tomatoes, avocado, radishes, corn, and basil. This salad is perfect if you are having an intimate dinner with your boo.

This last salad is perfect if you are hosting and need something easy with lots of flavors! The lettuce is based on preference, but the toppings are where it’s at. A couple of must-have toppings are apples, blue cheese, small button mushrooms, white onion, dried cranberries, crushed pepper, and pecans. I like to use fuji or honey crisp apples for a little sweetness. They also go very well with the blue cheese and mushrooms. If you are making this a meal adding buffalo chicken is the way to go! As for a dressing, a little blue cheese or a house dressing are both great options.
